Recipe: Jamie Oliver’s Beef Kofta Curry

I’m a big fan of Jamie Oliver – I really enjoy his 15 and 30 Minute Meals shows. I love his use of flavour and texture and his recipes have always worked well for and inspired me. I was entertaining a few friends the other evening and decided to make a curry. Whilst while browsing the beef recipe section I noticed the koftas, which I’ve not made for a long time. I’ll give you the ingredients and method as Jamie intended it and I’ve added a few recommendations here and there.

I’m definitely in favour of the Save With Jamie theme in cooking, so I’ve added some of my short cuts and money-saving tips! To serve 4 people you need:

Kofta Ingredients
400g lean beef mince
250g ready-to-eat Puy lentils
1 heaped teaspoon garam masala
1 green chilli

Curry Ingredients
200g Coconut Milk (½ tin)
3 ripe tomatoes (I chucked in some stray cherry tomatoes too)
2 heaped teaspoons Patak’s rogan josh curry paste
2 spring onions
1 thumb-sized piece of ginger
1 fresh red chilli
1 bunch fresh coriander
1 teaspoon turmeric
1 teaspoon runny honey
1 lemon
½ tablespoon Cornflour

Rice Ingredients
300g (1 mug) basmati rice
200 g green or yellow beans
200 g frozen peas
5 cardamom pods

Money Saving Tips

Before I jump to the method, I’ll share a few of my tips for this recipe.

1. If you grudge buying fresh ginger, chillies and bulbs of garlic then I highly recommend these Dorot packs. I absolutely swear by them and I keep one of each in my freezer for emergencies. 20130924-224756.jpg

2. If you buy fresh and don’t use them, it’s easy enough to recreate this idea by using the empty Dorot pack or plastic egg boxes.

3. My last tip is aimed at food snobs, my former collective. I now buy 90% of my food from Aldi now. They’re miles cheaper than most other supermarkets and quality is not compromised. Oh, and most of their products (including meat) comes for, Scottish producers.

Method

1. Put the lentils into a bowl with salt, pepper, the garam masala, finely chopped green chilli and mince, then mix and scrunch together with clean hands. I couldn’t find puy lentils in time, so I skipped them.

2. Divide the mixture in half, then with wet hands quickly squeeze and mould each half into 6 fat fingers. They should look like long meatballs!

3. Cook them in the frying pan with about a tablespoon of olive oil, turning frequently to ensure cooked thoroughly and evenly.

4. Proportion is key here. Put 1 mug of rice, 2 mugs of boiling water and the cardamom pods into your pot alongside your beans. Put the lid on and leave at a medium temperature for 5ish minutes.

5. You now need to make your sauce by blitzing your tomatoes, peeled ginger, spring onions, half the chilli, coriander, turmeric, honey, curry paste and coconut milk. Pour over the koftas in the pan, bring to the boil, then simmer. It was at this point I used a little corn flour to thicken the sauce. I didn’t measure it, so I’d recommend that you only use it if you feel the sauce is too runny. If you do, then judge how much you use for yourself.

6. Take the lid off the rice and mix in your peas. Pop the lid back on and give it a few more minutes. In this time I chopped up my coriander and chilli to sprinkle on top and placed yogurt in a dish for my guests.

My final dish looks slightly odd because I’d started eating it by the time I remembered to take a photograph. Horrendous habit. Working all week/day, rushing to the supermarket and then whipping up a 3 course meal isn’t easily done whilst blogging, let me tell you! I wanted fed! The curry is very simple – perfect as a quick and tasty meal after a busy day.

My final comment: yoghurt and fresh coriander on top are crucial. The flavour they add. Oh my.
